Variety Weekly Meal Prep Recipes

If you dread meal prep because of the lack of variety it seems to bring when checking the recipes, I have a recipe that offers a variety of tastes.  You will still use one pot of chicken but the variety comes in when you prepare the different ingredients involved.

Although this won’t save you from spending some time in the kitchen, it will remain one rewarding moment you will thank yourself for, during the week when you don’t have to make unnecessary meal arrangements.  Plus the best part about meal prep is the time it saves you midweek so you can get to other exciting things.

Items you need for this are the chicken recipe ingredients that I have shared previously as the  Easy Chicken Recipe. The good thing about this recipe is that there is no limit to what you can achieve with it to add variety to your weekly meals. I will share the meals you can prepare using one chicken recipe and of course other additional add ons to bring out variety to your weekly meals.


Sweet Potato Chicken Wrap


  1. Orange sweet potatoes
  2. Green peas
  3. Bell Peppers
  4. Avocado
  5. Chicken (Easy Chicken Recipe)
  6. Tumeric powder
  7. olive oil
  8. Salt and pepper.
  9. Tabasco green pepper sauce
  10. tortilla wraps


  1. Peel the sweet potatoes cut them into smaller pieces, wash and bring them to a boil for about 15 minutes.
  2. After the sweet potatoes have been cooked, in a frying pan add olive oil, add the cooked sweet potatoes, and using a masher, mash the sweet potatoes.
  3. Add 1 teaspoon of turmeric powder and mix with the sweet potatoes.
  4.  Add about 1/4 cup of green peas to the sweet potatoes and mix.
  5. Then as the final step, add 1 teaspoon of salt and 1/2 a teaspoon of black pepper.

Now that the cooking part is done, lay the tortilla wraps on a tray, add the sweet potatoes, chicken, cut bell peppers per your desirable size, and some avocado. Add tabasco sauce and enjoy.

Hint:  Add the avocado and the tabasco sauce in the morning that you plan to have this wrap, everything else can be added and left in the fridge.


Chicken Salad

Luckily this requires very minimal effort, as long as the chicken is prepared, you don’t have to cook anything additional.


  1. Feta Cheese
  2. Cherry tomatoes
  3. Avocado
  4. Rocket leaves
  5. Chicken (Easy Chicken Recipe)


  1. Cut the above ingredients into the desired sizes and mix. Serve with a salad dressing of your choice, you may still enjoy it without any salad dressing.

Hint: To ensure you enjoy a fresh salad, prepare this in the morning.  As long as the chicken is prepared beforehand, it should not take more than 5 minutes to add the remaining ingredients.


Lentil Chicken Wrap

This requires cooking the lentils, you can prepare this beforehand and preparing an easy mint and garlic sauce.


  1. Red onion
  2. 2 Eggplants
  3. green pepper
  4. Fresh mint leaves
  5. yogurt
  6. garlic
  7. 1 lemon
  8. Bell peppers
  9. 1 can of Lentils
  10. coriander
  11. Cumin
  12. olive oil
  13. tortilla wraps
  14. Chicken Easy chicken salad



  1. Cut the onion, eggplant, Green peppers into dice size.
  2. In a frying pan, add olive oil, 1/2 teaspoon garlic.
  3. Then add onion, with 1 teaspoon of coriander and 1 teaspoon of cumin
  4. Continue to fry and add the green pepper
  5. Add the eggplant, a can of lentils and lower the heat on the stove for about 15-20 minutes
  6. Add salt and pepper

Mint and garlic sauce


  1. In a small bowl, add 1/4 cup of yogurt, squeeze half a lemon juice into the bowl,
  2. add 1 teaspoon of garlic
  3. Chop the mint leaves into smaller chunks, and add 1 tablespoon into the yogurt mixture
  4. Mix the sauce

Lay the tortillas on a tray, spread the mint and garlic sauce on the tortilla, add the lentils, add the chicken and add some bell peppers (optional ).




Chicken Salsa Wrap


  1. Tomato Salsa
  2. Chicken Easy Chicken Recipe
  3. Avocado
  4. Bell peppers
  5. Rocket leaves
  6. Tortilla wraps


On a tray , lay tortillas and add salsa , chicken , avocado, and some bell peppers.
