Quick 15 Minute ChickPea Stew

This dish requires minimal effort, once all the vegetables have been cut into smaller pieces, you can quickly prepare it. This saves you time so you can enjoy other activities.

Chickpea stew is best served with bread, toasted in olive oil.  But based on preference, you can also serve this with some rice. This is a vegan-friendly dish if you are looking to enjoy meatless dishes.

  • Frying pan


  • 1 medium onion
  • 2 cloves of garlic
  • 2 medium carrots
  • 1 medium bell pepper
  • 1 chili pepper
  • 1 cup baby spinach
  • 2 410g can of chopped tomatoes
  • 1 410g can of chickpeas
  • 1 tbsp peanut butter
  • 1 tsp Olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp Salt
  • 1/2 tsp black pepper
  • 1 cup olives


  • Heat the stove in a frying pan, add one teaspoon of olive oil, add the onion cut into pieces, and the garlic.
  • Add paprika, ground cumin, and ground coriander and continue to fry for a minute to allow the spices to blend.
  • Then add the bell pepper with the carrots and the chili pepper and continue to fry for a minute.
  • Add a can of tomatoes and lower the stove for the pepper and carrots to continue cooking for about 5 minutes.
  • Then add a can of chickpeas, make sure they are rinsed, and one tablespoon of peanut butter.
  • Add 1 cup of olives , cut into halves .
  • In the final step, add 1 cup of baby spinach and mix with the rest of the stew for a minute or two, or until the spinach melts, which usually takes less than a minute.


This can be served with rice or some bread.
